A coeur à la crème is a heart-shaped dish traditionally used to make the French dessert which translates to “heart of cream”. This coeur a la crème, not unlike a vanilla cheesecake filling, is rich in flavour. You only need to indulge in a spoonful! With the delicious compote of roasted fruits, it’s designed to impress at a special occasion. You’ll need to prepare the crème a day ahead. If you don’t have a traditional mould, you can pour the filling into a muslin cloth and tie the cloth to a wooden spoon resting over a bowl. Place in the fridge. This will allow the excess liquid to drain from the crème. The crème will then become firm before serving.
