For a private client’s recent birthday party, he requested a specific chocolate mousse that could be quenelled onto guests’ plates and dressed with honeycomb, bee pollen and rose petals. It did look amazing, but ultimately it was all about the mousse! Make the mousse and garnish as you see fit.
