As a clinical nutritionist, I’m always on the hunt for meals that are not only delicious, but also nourishing. One of my favourite ways to check both of those boxes is by making my Herby One-Pan Salmon. It’s a dish that combines the ease of preparation with a wealth of health benefits due to its delicious ingredients, making it a perfect choice for busy weeknights or a relaxed weekend dinner for two.

One of things I love most about this recipe is its simplicity and wholesomeness. All you need to create it is just a few fresh ingredients and a heavybottomed frying pan. The good news is that as easy as it is to prepare, you can wow your family or guests with a dish that looks and tastes as though it’s been transported straight out of a gourmet kitchen.

It takes no time at all to get this dish onto the table. In less than 30 minutes, you have a complete meal on your plate which means more time to enjoy your food and less time spent cooking and then the aftermath of having to scrub down a multitude of pots and pans. I regularly bring this recipe out when life gets busy, and it’s pretty much fail-safe. There’s also no sacrificing flavour even though it’s healthy and simple.

Salmon holds a special place in my heart (and of course my kitchen) for its incredible health benefits. It’s a fish that embodies a rich source of omega-3 fatty acids, which are crucial for helping to reduce inflammation in the body. There are many of us who struggle with chronic and low-grade infl ammation, which can lead to various health issues, including heart disease and even depression. By including more salmon in your diet, you’re not just enjoying a tasty meal, you’re also providing your body with essential nutrients that help to lower inflammation.

I often remind my clients that incorporating omega-3s into their diets can help to improve heart health, enhance brain function, and even elevate mood. There is also the wonderful feeling of knowing that you’re doing something good for your body while still indulging in extremely tasty fl avours. In addition to the salmon, this recipe features two wonderful herbs that you can use freely: sage and dill. These aren’t just any old flavour enhancers — they also contribute to the health of your gut health in significant ways.

Sage is a herb with an impressive profile. It’s known for its anti-infl ammatory properties, and its compounds can help soothe digestive issues. Many cultures have used sage as a natural remedy for gastrointestinal discomfort. I fi nd that incorporating sage into my meals not only elevates the flavour, but also supports digestive health.

Dill, on the other hand, is a fantastic digestive aid that can help to alleviate bloating and gas, a common concern that I see many of my clients struggle with. I often add dill to dishes because its fi bre and essential oils can promote healthy gut flora and, in turn, a thriving gut microbiome. This is particularly important for maintaining a balanced ecosystem. Plus, it adds a lovely fresh taste that complements the salmon beautifully.
